The 40 th alphabet in Sindhi AlifBe is گهہ i.e घ (in Devanagari) or 'Gh' in Roman Sindhi. 'Gh' as in Ghat or Ghee. And the corresponding dish is 'Ghotyal Saag' i.e Sindhi Style mashed spinach. It is different from Sindhi Saibhaji. In Arabic Sindhi there are two consonants that sound similar but are actually different; ت and ط , i.e 'T' as in Taiwan, Tahini, Tabla etc. ت as in Tosha was covered in the AlifBe~ 6 , while the 30th consonant i.e ط is what we are discussing today. Unlike the ت that is used for words of Sindhi origin, ط is used for words of Urdu/Persian/Arabic origin and hence there is no Sindhi dish name that starts with this consonant. But the word Ta'am, meaning a feast, starts with this 'T' hence here I am with, Ta'am! The 29th Consonant in Sindhi AlifBe is ض in Arabic Sindhi, ज़ in Devanagari and 'Z' in Roman Sindhi. 'Z' as in 'Zaroor' or 'Zaroori'! And since there is no Sindhi dish with a name starting with this particular Z, I have covered 'Zaroori Masalha' or essential spices in the post. The next consonant in AlifBe (Sindhi 'alphabet') is ص in Arabic Sindhi, स in Devanagari and in Roman Sindhi it is 'S', as in 'sandook'. There is no Sindhi dish starting with this ص. We have arrived at the 4th shape group in Sindhi Script with the the 18th letter and it is د or 'D~' as in Daawat or as in Dehradun, in Roman Sindhi while द in Devanagari. And the Sindhi dish starting with D~ is Dal Dimma, a mix of whole mung, chana dal and mung dal, popularly sold as Dal mung, as a Sindhi street food. The 16th letter of Sindhi Alphabet, the AlifBe is ڇ or 'Chh' as in Chhattisgarh, in Roman Sindhi while छ in Devanagari. And the Sindhi dish starting with ڇ is Chhola Dab^al (Chola Dabhal) ! It is a popular street food in Sindhi populated areas like Ulhasnagar. Chickpeas curry topped over laadi pao chunks and garnished with chutney, onion slices and sev makes it a delicious breakfast.
